Beet, Citrus and Avocado Salad

In Part 1 of my blog series, Using Food as Medicine, I noted how beets can be a fantastic benefactor when it comes to detoxifying your body. Beets act as natural blood cleansers, helping to detoxify the blood of heavy metals and waste due to a compound that forms Glutathione. Dressing
2 Tbsp lemon or lime juice
1 tsp cumin seeds, ground
½ tsp Dijon mustard
1 Tbsp olive oil
Salad
1 bunch beets, roasted
1 pink grapefruit
1 medium Hass avocado, slightly firm
2 Tbsp. fresh basil, slivered
Directions
- Mix together lemon or lime juice, ground cumin, salt, pepper and Dijon mustard. Whisk in the olive oil.
- Cut beets in slices or wedges. Toss with the dressing to taste.
- Cut away both ends of the grapefruit so that it sits flat on your work surface. Cut the skin and the pith completely away from the fruit, following the natural curve of the fruit from top to bottom. Hole the grapefruit in your hand over a bowl to catch the juice and cut away each segment from between the membranes.
- Arrange the beets in the center of a platter, and surround with the grapefruit and avocado slices. Drizzle on the remaining dressing along with the grapefruit juice from the bowl. Sprinkle on the basil and serve.
